老式爆米花机
早期的爆米花在加工时,是将玉米 (许多谷物和杂都类都可以) 置于特殊容器中的加热,使得玉米处在高温高压的状态下,锅内的温度不断升高,且锅内气体的压强也不断增大.当温度升高到一定程度,米粒便会逐渐变软,米粒内的大部分水分变成水蒸气.由于温度较高,水蒸气的压强是很大的,使已变软的米粒膨胀.但此时米粒内外的压强是平衡的,所以米粒不会在锅内爆开.  然后“砰”的一声巨响,机器盖子被打开,玉米被突然释放在常温常压下,锅内的气体迅速膨胀,压强很快减小,使得玉米粒内外压强差变大,导致玉米粒内高压水蒸气也急剧膨胀,瞬时爆开玉米粒,即成了爆米花,同时玉米内部的结构和性质就会发生变化.  而现在的爆米花大多基本上都是由爆炸玉米经过简单加热爆出来的爆米花,加工容器早已不是早期的“转炉”了,因此也避免了铅带来的危害.
